Ruta de las Flores: El Salvador's coffee highlands, and the pacamara

The Ruta de las Flores, El Salvador runs five towns through the coffee highlands, with the pacamara variety and Juayúa's weekend food fair.

The Ruta de las Flores runs through El Salvador's western coffee highlands, inside the Apaneca-Ilamatepec Biosphere Reserve — the same one that holds the country's highest volcano. It is the cool counterpoint to the coast.

The towns

Nahuizalco, Salcoatitán, Juayúa, Apaneca and Concepción de Ataco, across the departments of Sonsonate and Ahuachapán.

Juayúa is known for its weekend food fair. Confirm current days and hours, since they can change.

And Concepción de Ataco stands out for its murals and street art.

Why coffee grows well here

The range sits at altitude, and higher altitude means lower temperatures.

Lower temperatures mean the cherry ripens more slowly, and that slow ripening concentrates sugars and develops acidity.

Add volcanic soil — El Salvador has 174 certified volcanoes — and a mountain microclimate, and you have the three factors behind a quality origin.

The pacamara

This is the variety associated with the country.

Pacamara is a cross that has earned recognition in international cuppings, with a notably large bean and a distinctive profile.

Also pacas, another variety tied to El Salvador.

Ask which variety you are tasting — the profile changes considerably between them.

What to ask at a cupping

Which region and which farm: the beans come from.

What altitude: the plot sits at.

Which variety

Which process

— washed, natural or honey.

And when it was roasted.

On process: washed gives cleaner cups with defined acidity; natural, sweeter and fruitier; honey sits between. The same bean tastes different depending on which.

If a farm offers the same origin in two processes, take it. It is the best possible lesson in what milling contributes to the cup.

How many days

One day: two or three towns, rushed.

Two days: the full route with time, overnighting in the highlands.

Staying over changes the experience — the towns are different once the day trips leave.

The climate

The range is cool, in contrast to the coastal heat.

Bring a layer even if you are coming from the beach. The difference is noticeable by late afternoon.

Getting to Ruta de las Flores El Salvador

Ilopango (ILS) handles general aviation in San Salvador, 30 km (19 mi) from the international airport.

El Salvador is too small for domestic flying — the route is reached by road from the capital.

And it is mountain road, with curves and elevation change: allow more time than the map suggests.

On paying

Bitcoin's legal tender status was repealed on 30 January 2025.

Use is optional, and in mountain towns, cash in dollars is what works.

What else the country has

Santa Ana volcano (Ilamatepec) at 2,381 m (7,812 ft), with park entry closing at 11:00 a.m. sharp and a mandatory guide.

Lake Coatepeque, in its caldera.

Suchitoto, the colonial town on Lake Suchitlán.

And Surf City, 40 minutes from the capital.

From the air

The coffee range terraced along the contour lines.

The towns distributed across the gradient, each at its own elevation, which explains their differences in climate and crop.

And the volcanic chain of the Apaneca-Ilamatepec Biosphere Reserve, with the country's highest volcano closing the view.

Timing: low-angle light at either end of the day, which separates each elevation band.

Before you book

A warm layer, even coming from the coast.

Confirm the Juayúa fair days.

Buy directly from producers at the farms.

Cash in dollars.

And haggle with judgment over craftwork — it represents hours of labor.

Buying directly from producers

It is the route for spending to reach the grower, rather than an intermediary.

What to ask at the farm: the plot's altitude, the variety, the process and the roast date.

And pay in cash, since mountain-town workshops and small farms rarely take cards.

On craftwork: the pieces sold along the route represent hours of hand labour. Haggle with judgment, the way you would with any maker rather than a reseller.
